Varieties: late harvest 100% Viura
Elaboration: Manual selection of the grapes with botrytis cinérea. It is made a pre- fermentative maceration during 12 hours. Later we press it and start with a slow fermentation into barrel witth cold temperatures during 2-3 months.
Ageing: 6 months in a french oak barrel.
Tasting: Delicated, mature and healthy fruit aromas, touchs of witheres flowers, medium potency. Really good and soft mouth filling with a moderate sweetness well balanced with the acidity.
Pairing: Perfect for foie entrée dishes, desserts elaborated with milk or fruit. Strong cheese.
Temperature: 10- 12ºC.
“ This wine is from a vineyard that, historically, never end its maturation. Because of this, I decided to protect the grapes and looking for this alternative to produce wine. The result was a long waiting until its harvest in December”.
