Varieties: Tempranillo 100% from our vineyard La Taconera.
Elaboration: Elaborated in stainless steel tanks. Pre-fermentive maceration during 3 days at 13-14ºC, with long pumping-over. The fermentation begins afer four days and lasts around ten days at between 25 – 27ºC of temperature, preserving the frankness of first aromas.
Ageing: Aging and malolactic fermentation in different French oak casks in order to find the complexity in aromas. Time of aging: 16 months with 3 rackings.
Tasting: High-depth colour and high intensity wine, cherry red colour. Honest and intense bouquet, predominance of ripe fruit, dairy products, toffee and a bit seasoned. Powerful in the mouth, elegant, balanced, meaty and very fruity. Very long aftertaste.
Pairing: Combines perfectly with red meats and roasts.
Temperatura óptima de consumo: 16- 18ºC.
“ La Taconera is the first vineyard I bought and it was planted in 1921. It was a mistreated vineyard and we spent 4 years to recover it and start the elaboration of this personal wine. It has 0.4 Has. harvested in boxes carefully and later every grape is selected by hand”.
